Preparation Instructions:  For best results thaw under refrigeration.  Use within 5 - 7 days.  Cook steak according to a cooking or meat thermometer rather than a time table.  Remove steaks from grill, pan, or oven 5 degrees before desired doneness.  Let steak rest 5-10 minutes before serving. 

 

Rare:  125 – 130 degrees

Medium Rare:  130 -145 degrees

Medium:  140 – 145 degrees

Medium Well:  150 – 160 degrees

Joe and I just had the Elite Black Angus Filet Mignon for dinner and OMG guys! best meat I have ever eaten! seriously...I have never gotten meat like this in the supermarkets here in AZ. It cut like butter and so juicy! What I liked about it also is that it is packaged for single serving!

Crowned Filet Mignon

Ingredients:
2 (6 ounce) Filet Mignon Steaks, thawed, 2 tsp Grapeseed Oil, Salt and Pepper, to taste, 1 Tbsp Butter, 6 Sundried Tomatoes, diced, 1 Tbsp Green Onions, chopped, ½ Cup Fresh Crab Meat, 1 tsp Garlic, minced

Directions:
1. Preheat oven to 400. Season steaks generously with salt and pepper on both sides. 2. Preheat an oven safe pan or skillet over medium-high heat. Add grapeseed oil and sear steaks in hot pan for 2 minutes per side. Place pan or skillet in oven for 10-12 minutes for medium. Remove from oven and rest while remaining ingredients are prepared. 3. In a small pan, melt butter over medium heat. Sauté Sundried Tomatoes, Crab, Green Onions and Garlic until Crab is heated through. 4. Top each Filet with ½ of the Crab mixture and serve.

Grilled Filet Mignon with Gorgonzola Cream Sauce

Tender filet mignon is drizzled with a savory gorgonzola cream sauce and topped with crumbled bacon bits and sliced green onions

Serves: 4

Ingredients:
4 cups heavy cream 3 ounces crumbled Gorgonzola cheese 3 tablespoons grated Parmesan cheese 3/4 teaspoon salt 3/4 teaspoon ground black pepper 1/8 teaspoon ground nutmeg 4 (8 ounce) fillets beef tenderloin 1 pinch lemon pepper 1 pinch garlic powder 1 pinch onion powder salt and ground black pepper to taste 12 slices thick sliced bacon, chopped 4 green onions, chopped

Directions:
1.Pour heavy cream into a saucepan and bring to a boil over medium heat. Reduce heat and simmer until the cream has reduced by half, stirring occasionally, about an hour. Remove from heat and whisk in the Gorgonzola cheese and Parmesan cheese, salt, pepper, and nutmeg, until the cheese has melted. 2.Season the beef tenderloin with lemon pepper, garlic powder, onion powder, salt, and pepper. Set aside. Place the bacon in a large, deep skillet, and cook over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes. Drain the bacon on a paper towel-lined plate. 3.Preheat an outdoor grill for medium-high heat, and lightly oil the grate. 4.Cook the steaks until they start to firm, and are reddish-pink and juicy in the center, 3 to 5 minutes per side. An instant-read thermometer ed into the center should read 130 degrees F (54 degrees C). Remove the steaks from the grill and tent with foil to rest for 5 to 10 minutes. Serve each steak with the Gorgonzola sauce and top with crumbled bacon and chopped green onion.

Beef Filet “Chimichurri” Mignon

Serves: 4 to 6
Prep Time: 40 minutes

Ingredients:
Beef Filet Mignon 1 Tbsp Olive Oil 1 Tbsp Kosher Salt 1 Tbsp Ground Black Pepper 1 Tbsp Granulated Garlic 1 Cup Fresh Cilantro (Packed Tight) 1 Cup Fresh Italian Parsley 6 Tbsp Olive Oil 3 Garlic Cloves 2 Tbsp Red Wine Vinegar 2 Tbsp Cold Water 1 Tsp Crushed Red Pepper Flakes 1 Tsp Kosher Salt 1 Tsp Ground Black Pepper

Directions:
In a Food Processor combine the following ingredients: Cilantro, Italian Parsley, Garlic, Olive Oil, Red Wine Vinegar, Cold Water, Crushed Red Pepper Flakes, Kosher Salt & Ground Black Pepper. Turn Food Processor on and let everything mix until well incorporated. If sauce looks to dry add more liquid if the sauce looks to loose add more cilantro or Italian parsley until it gets to the right consistency. Place in Plastic Container and put in refrigerator until ready to use. Preheat Grill Take Beef Filet Mignon’s and rub with Olive Oil then season with Kosher Salt, Ground Black Pepper & Granulated Garlic. Place seasoned Beef Filet Mignon’s on Grill. Cook Beef Filet Mignon’s for about 4 minutes per side until desired doneness. When Beef Filet Mignon has reached its desired doneness take off grill and set aside. Take Filet Mignon and using a knife carefully slice down one Beef Filet Mignon at a time. Place sliced pieces of Beef Filet Mignon on plate. Take Chimichurri Sauce out of refrigerator. Using a spoon pour over Sliced Beef Filet Mignon. Serve with favorite Side Dishes & Enjoy!!!
