Preparation Instructions:  For best results thaw under refrigeration.  Use within 5 - 7 days.  Cook steak according to a cooking or meat thermometer rather than a time table.  Remove steaks from grill, pan, or oven 5 degrees before desired doneness.  Let steak rest 5-10 minutes before serving. 

 

Rare:  125 – 130 degrees

Medium Rare:  130 -145 degrees

Medium:  140 – 145 degrees

Cinnamon Smoked Ribeye and Mashed Potato Cakes

(winner of the Santa Margherita Chianti Classico Pour & Pair Challenge)

Ingredients:
Ribeye Ingredients: • 4 Black Angus Ribeye Steaks • 1 Cup Brewed Dark Roast Coffee • 1 tsp Cinnamon • 1 Tbsp Olive Oil • 2 tsp Coarse Ground Salt • 1 tsp Black Pepper • 2 tsp Minced Garlic Mashed Potato Ingredients: • 4 Medium Potatoes (peeled, large dice) • 1/2 Cup Evaporated Milk • 1/3 Stick of Butter • 2 Eggs • 1/2 Cup Flour • 1/3 Cup Green Onion, Chopped • 2 Tbsp Vegetable Oil

Directions:
Preparation: 1. Preheat oven to 350. Tenderize Ribeye Steaks with a thick-prong fork. Pat each steak evenly with cinnamon and cover with brewed coffee. Set aside, but do not refrigerate (steaks should be at room temperature when cooked). 2. In a large pot, bring water to a boil. Add potatoes and boil until tender (15-20 minutes). Drain and return to pot. Add evaporated milk and butter. Beat with a hand mixer until almost smooth. Mix in egg, flour and green onion evenly. Form into 1/2 inch cakes and set aside. 3. Remove steaks from coffee. Toss with olive oil, salt pepper and garlic. Heat a large saute pan to medium-high heat. Sear both sides of each ribeye for 2 minutes. Remove from heat, place on oven safe pan and place in oven to finish (8-10 minutes depending on desired doneness). 4. While steak is in the oven, heat a large saute pan to medium high heat. Add 1 Tbsp vegetable oil. Fry 4 potato cakes until golden brown on each side. Remove and drain on a paper towel. Add remaining 1 Tbsp of vegetable oil. Fry next 4 potato cakes until golden brown on each side. Remove and drain on paper towel.

Marinated Ribeyes

The marinade mainly consists of Worcestershire sauce and brown sugar. The sugar makes the steaks tender and gives just a hint of sweetness

Serves: Recipe Yield 4 servings
Prep Time: Ready In: 1 Hr 25 Min

Ingredients:
4 (1/2 pound) rib-eye steaks garlic powder to taste onion powder to taste salt and pepper to taste 1 3/4 cups Worcestershire sauce 1/3 cup brown sugar

Directions:
1.Season the steaks with the garlic powder, onion powder, salt, and pepper, and set aside. 2.Pour the Worcestershire sauce and brown sugar into a large resealable plastic bag, seal, and shake to mix. Pour half of the marinade into another large resealable bag. Place two steaks in each bag, and turn to coat. Squeeze out excess air, and seal the bags. Refrigerate for at least 1 hour. 3.Preheat grill for high heat. Drain the marinade from the steaks into a small saucepan, and bring to a boil boil for several minutes. 4.Brush grill grate with oil. Grill steaks 7 minutes per side, to desired doneness. Baste often with the boiled marinade during the final 5 minutes of cook time
