Cooking Method(s):
CONVENTIONAL OVENSTOVE TOPGRILL

Ingredients:  Pork; contains up to 16% of solution (water, contains less than 2% of sodium lactate, vinegar, sodium phosphate, salt, potassium chloride, flavoring, maltodextrin).

Preparation Instructions:  For best results thaw under refrigeration.  Use within 3 - 5 days.

 

Skillet:  Lightly coat skillet with oil or cooking spray.  Heat pan over medium high heat.  Add product and brown 1 minute per side.  Reduce heat to medium low, cover and cook 6-9 minutes, or until internal temperature reaches 150 degrees.

 

Oven:  Pre-heat oven to 350 degrees.  Place product on foil lined baking sheet.  Cook 12-20 minutes or until internal temperature reaches 150 degrees. Grill:  Spray grill with cooking spray.  Pre-heat grill to medium high.  Grill product 4-5 minutes per side or until the internal temperature reaches 150 degrees.

In 55 years of eating solid foods I have never had chops of this quality anywhere in the world. Ray Rastelli you have done it again. Thank is not even close enough for the enjoyment from the whole family for these chops.

Seared Pork Chops with Herb Rub

Serves: 4
Prep Time: 20-30 minutes

Ingredients:
4 Bone-In Pork Rib Chops*, ¼ cup Flour, 1 tsp Dried Thyme, 1 tsp Dried Rosemary, 1 tsp Dried Sage, 1 tsp Garlic Powder, Salt and Pepper to Taste, 1 Tbsp and 2 tsp Grapeseed Oil, 1 Tbsp Butter

Directions:
1. Mix Flour, Thyme, Rosemary, Sage and Garlic Powder. Toss Pork Chops in mixture and shake off excess. Heat 1 Tbsp Oil in large, ovenproof skillet on MEDIUM-HIGH until oil faintly smokes then add Pork to sear. 2. Sear for 3-4 minutes and turn over when pork changes color about one-quarter of way up sides and seared side turns golden brown. Sear an additional 3-4 min. 3. Place pan with pork in oven. Cook an additional 4-5 min. 4. Remove from oven. Add 2 tsp Oil and Butter to pan carefully swirl. Spoon over pork. Cook on medium for another 1-3 min. Transfer to platter let rest 5-10. *Also works with Pork Porterhouse Chops, Boneless Pork Chops

Tropical Grilled Pork Chops

Marinated pork chops are grilled to perfection and topped with a spicy salsa starring pineapple, mango, and applesauce.

Serves: 4 - 6

Ingredients:
1 clove garlic, minced 1 teaspoon chili powder 1/4 teaspoon cayenne pepper 1 pod cardamom seeds 1/2 teaspoon water, or as needed 1 teaspoon vegetable oil 1/4 cup rice wine vinegar 1/2 cup sugar 1 mango - peeled, seeded and chopped 1/4 teaspoon salt 1/2 teaspoon cilantro 2 teaspoons lemon juice 1 fresh jalapeno pepper, minced 1 1/2 cups unsweetened applesauce 3 pineapple rings, chopped 1 pinch white pepper 1/3 cup soy sauce 1/3 cup rice wine vinegar 4 - 6 pork chops

Directions:
1.With a mortar and pestle, mash together the garlic, chili powder, cayenne, and cardamom seeds. Mix in enough water to form a paste. 2.Heat the oil in a saucepan over medium heat. Stir in spice paste, and cook until it begins to bubble, about 30 seconds. Stir in vinegar cook without boiling for 2 minutes. Stir in sugar until it dissolves. Mix in mango, salt, cilantro, lemon juice, and jalapeno simmer 20 minutes. Stir in applesauce and pineapple simmer 10 minutes more. Season with white pepper. Place in a bowl, cover, and refrigerate until ready to use. 3.To prepare marinade, mix 2/3 cup of the salsa with soy sauce and 1/3 cup vinegar. Place pork chops in a large resealable plastic bag, and pour marinade over chops. Seal tightly, and place in the refrigerator for 1 hour. 4.Prepare grill for medium-high heat. Drain marinade from bag, and heat in a saucepan until boiling. 5.Lightly oil grill grate. Place pork chops on the hot grill. Cook 10 minutes, or to desired doneness, turning once and basting occasionally with the boiled marinade. 6.Warm remaining salsa over medium-low heat. Serve pork chops topped with the salsa.

Balsamic Glazed Pork Chops

Serves: 4
Prep Time: 15 minutes

Ingredients:
1 large sweet onion, chopped 2 tablespoons butter Pinch of thyme 1/2 cup balsamic vinegar ½ cup diced drained canned peaches 3 tablespoons brown sugar 4 pork chops 1/4 cup flour salt and pepper 1 tablespoon olive oil 1/2 cup chicken broth

Directions:
In a saucepan over medium-low heat, cook onions in butter until golden brown and tender, about 15 to 20 minutes. Add thyme, vinegar, peaches, and sugar. Simmer for 5 minutes. Heat oil in a large skillet over medium heat. Sprinkle chops with salt and pepper then dust with the flour. Arrange in the skillet and brown on both sides. Add chicken broth; simmer covered for 10 minutes, then uncover and continue cooking for 5 minutes longer. Add onion mixture, cover, and cook for 10 minutes longer.
