Ingredients:  Pork; contains up to 16% of solution. Solution Ingredients: Water, contains les than 2% of sodium lactate, vinegar, sodium phosphate, salt, potassium chloride, flavoring, maltodextrin.

Preparation Instructions:  For best results thaw under refrigeration.  Use within 3 - 5 days.


Oven:  Place oven rack in center of oven and pre-heat t 450 degrees.  Season roast with your favorite spices.  Place the roast on a rack in a roasting pan, fat side up.  Place roast in oven for 10 minutes and then set temperature to 250 degrees.  Cook until a meat thermometer placed in the center of the fattest part of the roast reaches an internal temperature of 150 degrees.  Remove from the oven and allow to rest 10 minutes before slicing.

Sugar Glazed Pork Roast with Apple Compote

Serves: 6-8
Prep Time: 60 minutes approximately

Frenched 4-Bone Pork Roast, 2 tsp Salt, ½ tsp Fresh Ground Black Pepper, 1 tsp Cumin, 1 tsp Chili Powder, 1 tsp Cinnamon, 2 Tbsp Olive Oil Glaze: 1 1/2 cups Light Brown Sugar, packed, 2 Tbsp Flour, 2 tsp Dijon Mustard, 3 Tbsp Cider Vinegar Compote: 3 Apples (Honeycrisp or Fuji), quartered and cored, ½ Cup Brown Sugar, 1 Cup Sherry, 1 Tbsp Fresh Ginger Root, 1 Lime, zest and juice, 3 Sprigs Fresh Thyme

1. Combine all compote ingredients in a saucepan and bring to a simmer. Cover and cook for at least 60 minutes. Remove thyme sprigs. 2. Preheat oven to 350. Stir together the Salt, Pepper, Cumin, Chili Powder and Cinnamon. Coat Roast generously with spice rub. Heat an oven safe cast iron skillet over medium-high heat until and add Oil. Place Roast in pan and sear on all sides turning once each side reaches golden brown (about 4 minutes total). 3. Stir together the Brown Sugar, Flour, Mustard and Vinegar until smooth. Brush evenly over Roast and place skillet on the middle rack of preheated oven. Roast in the middle of the oven until a thermometer in center of the roast reaches 145 degrees (about 30 minutes). Rest 10 minutes.

Roasted Prime Pork Rib

Serves: 4 to 6
Prep Time: 3 hours

3 pound 4 Bone Prime Pork Rib Roast 3 cloves minced Garlic 2 teaspoons kosher salt 1 teaspoon cracked black pepper 1 teaspoon fresh rosemary 1 teaspoon fresh chopped sage 2 ounces olive oil 1 cup rough chopped celery 1 cup rough chopped onion 1 cup rough chopped carrots Additional salt and pepper 1 cup of water

Pre heat your oven to 425. Make a “Rub” with the garlic, salt, pepper, rosemary and sage. Place the roughly chopped celery, carrots and onions in the bottom of a roasting pan season with salt and pepper add half the olive oil and toss the vegetables. Season the fat side of the roast with the “Rub” and add the remaining olive oil to the roast and rub it in. Place the roast in the oven for 20 minutes. Add the water and reduce the heat to 325 degrees. Roast an additional 1 hour to 1 ½ hours. Or check the internal temperature with a meat thermometer. When the internal temperature reaches 145 degrees remove the roast from the oven and set it on a warm plate covered with foil. Allow the roast to rest for 20 minutes before serving. Meanwhile as the roast rests strain the liquid from the vegetables, this will make an awesome “JUS”. Season the strained “jus” with a bit of salt and pepper and serve it with the roast.
