CONVENTIONAL OVENSTOVE TOPGRILL

Ingredients:  Pork

Preparation Instructions:  For best results thaw under refrigeration.  Use within 3 - 5 days.

 

Skillet:  Lightly coat skillet with oil or cooking spray.  Heat pan over medium high heat.  Add product and brown 1 minute per side.  Reduce heat to medium low, cover and cook 6-9 minutes, or until internal temperature reaches 150 degrees.

 

Oven:  Pre-heat oven to 350 degrees.  Place product on foil lined baking sheet.  Cook 12-20 minutes or until internal temperature reaches 150 degrees. Grill:  Spray grill with cooking spray.  Pre-heat grill to medium high.  Grill product 4-5 minutes per side or until the internal temperature reaches 150 degrees.

Parmesan Crusted Pork Medallions

Serves: 6-8
Prep Time: 30-40 minutes

Ingredients:
8 Pork Medallions*, 1 cup Seasoned Bread Crumbs, 1/2 cup grated Parmesan Cheese, 2 tsp Salt, 2 tsp Pepper, 2 Tbsp Canola Oil, 3/4 cup Onion, chopped, 3 Garlic Cloves, minced

Directions:
1. Combine Bread Crumbs, Parmesan Cheese, Salt and Pepper. Add Pork, one medallion at a time, and shake to coat. 2. In a large skillet over medium heat, cook Pork in Oil for 2-3 minutes on each side or until meat is no longer pink. Transfer to baking sheet and place in oven for 10-12 minutes. (Juices should run clean and a meat thermometer should read 140). 3. Add onion to the pan cook and stir until tender. Add garlic, cook 1 minute longer. Serve with pork. *Also works with Pork Tenderloin and Boneless Pork Chops (adjust cooking times accordingly)

Marinated Pork Medallions with a Ginger-Apple Compote

Fresh pork medallions are marinated in a balsamic vinegar and garlic blend and topped with a fresh, homemade ginger-apple compote."

Serves: Recipe Yield 4 servings

Ingredients:
2 cups balsamic vinegar 2 tablespoons minced garlic 1 tablespoon chopped fresh thyme 1 cup olive oil 1 pork tenderloin, cut into 2 inch pieces 1/2 cup butter 1/4 cup packed brown sugar 1 apple, thinly sliced 1/4 cup dried cherries 1 tablespoon minced fresh ginger root 1 pinch ground cinnamon 1 pinch ground nutmeg

Directions:
1.Puree the balsamic vinegar, garlic, and thyme in a blender until mixed. With the blender running, slowly pour in the olive oil until thickened and incorporated. Pour the marinade into a resealable plastic bag. Add the pork pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 30 minutes. 2.Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove the pork from the marinade, and shake off excess. Discard the remaining marinade. 3.Cook the pork on the preheated grill until no longer pink in the center, about 10 - 15 minutes. An instant-read thermometer ed into the center should read 160 degrees F (70 degrees C). Once cooked, remove from the grill, cover with aluminum foil, and allow to rest for 5 to 10 minutes before slicing. 4.While the pork is cooking, melt the butter in a saucepan over medium heat. Stir in the brown sugar until it begins to simmer. Add the apples, cherries, ginger, cinnamon, and nutmeg. Cook and stir until the apple is tender, about 5 minutes. Serve the sliced pork topped with the apple compote.

Pork Medallion & Mango Unique Stir Fry

Serves: 3 to 4
Prep Time: 35 minutes

Ingredients:
8pcs – 3oz Pork Tenderloin Medallions 3 Tbsp Canola Oil 1 Tbsp Fresh Garlic (Minced) 1 Tbsp Fresh Ginger (Minced) 1 Small Red Onion (Thinly Sliced) 1 Small Red Bell Pepper (Thinly Sliced) 1 Small Green Bell Pepper (Thinly Sliced) 2 Mangos (Peeled, Pitted & cut into Chucks) ½ pound Snow Peas ½ Cup Dry Sherry ¾ Cup Teriyaki Glaze ½ Cup Soy Sauce 1 Tsp Kosher Salt 1 Tbsp Ground Black Pepper 1 Tsp Red Pepper Flakes 1 Tbsp Chinese Five Spice (Optional)

Directions:
Take Pork Medallions and season with Kosher Salt & Ground Black Pepper. In a Medium Sized Teflon Coated Sauté Pan heat Canola Oil. Place seasoned Pork Medallion pieces in Sauté Pan. Cook until golden brown on each side usually will take about 4 minutes per side. As pork medallions are still cooking add your Sliced Red Onions, Green Bell Peppers, Red Bell Peppers, Garlic, Ginger, Mangos & Snow Peas to Sauté Pan. Carefully using a pair of tongs mix everything together until well blended. Next add your Red Pepper Flakes & Chinese Five Spice. When vegetable are starting to become tender deglaze your pan with Dry Sherry. Turn down heat to a simmer. Lastly add your Teriyaki Glaze & Soy Sauce to sauté pan. Again take your tongs and continue to mix until everything is well incorporated. Grab a plate and place 2 Pork Medallions in the middle of the plate. Using a pair of tongs place some of the vegetable mixer on the side of the Pork Medallions. Drizzle with remainder of sauce from pan. Serve with favorite Side Dishes and Enjoy!!!
