Cooking Method(s):
CONVENTIONAL OVENSTOVE TOPGRILL

Ingredients:  Chicken

Preparation Instructions:  For best results thaw under refrigeration.  Use within 3 - 5 days.

 

Skillet:  Lightly coat skillet with oil or cooking spray.  Heat pan over medium high heat.  Add breast and brown 1 minute per side.  Reduce heat to medium low, cover and cook 6-9 minutes, or until internal temperature reaches 170 degrees.

 

Oven:  Pre-heat oven to 350 degrees.  Place breast on foil lined baking sheet.  Cook 17-21 minutes or until internal temperature reaches 170 degrees.

 

Grill:  Spray grill with cooking spray.  Pre-heat grill to medium high.  Grill breasts 3-4 minutes per side or until the internal temperature reaches 170 degrees.

the chicken breasts from Rastelli are a favorite at our house. I eat my left overs 3 days later and the chiken still has the same juicy texture to it..Love it!

We just love the flavor of the chicken breasts.I was always a dark meat lover because it was more tender and juicy to me..now I eat this all the time!!! It is so moist and tender.. I am hooked!

Quinoa Salad with Grilled Chicken

Serves: 2

Ingredients:
2 (6oz) Chicken Breasts (boneless and skinless) 4 cups Water 10 ounces Quinoa (about 1 1/2 cups) 2 teaspoons Salt (for water) 1 pound Plum Tomatoes, seeded and chopped 1/2 Vidalia Onion, chopped 1/2 cup Broccoli or Broccoli Rabe, chopped 1/4 cup fresh Italian Parsley, finely chopped 1 large Garlic Clove, minced 2 tablespoons White Balsamic Vinegar Freshly ground Sea Salt and Black Pepper 1/4 cup Extra-Virgin Olive Oil

Directions:
Bring water to a boil in a 4 quart sauce pan, add 2 teaspoons of salt over high heat. Reduce the heat and add Quinoa (medium), cover, and simmer until the Quinoa is tender about 25- 30 minutes. Drain well and place in a large bowl to cool. Set aside. While the Quinoa cooks, season your chicken breasts with salt and pepper and grill. Cook until internal temperature of the thick part of the breast reaches 165 F. Remove from grill and let cool. Wash and cut tomatoes, onion, broccoli and parsley add to the Quinoa and toss to mix. In a small mixing bowl, whisk together the garlic, vinegar, salt, pepper and olive oil to form the vinaigrette, add ¾ to the faro salad and toss to coat evenly. Next slice the chicken breast on a bias cut (at an angle) into ½ inch thick strips. Place one or two generous scoops of the Quinoa Salad onto your serving plates (2), top with sliced chicken breast, garnish with parsley and serve with remaining dressing. Chef Rick Tip: You can make the salad in advance and it can be refrigerated. Then add your chicken, when ready to eat.

Chicken Fried Chicken

An easy and fun chicken recipe that will please the whole family.

Ingredients:
Ingredients 30 saltine crackers 2 tablespoons all-purpose flour 2 tablespoons dry potato flakes 1 teaspoon seasoned salt 1/2 teaspoon ground black pepper 1 egg 1/4 cup vegetable oil 6 skinless, boneless chicken breast halves

Directions:
1.Place crackers in a large resealable plastic bag seal bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well. 2.Beat egg in a shallow dish or bowl heat oil in a large skillet over medium high heat. 3.One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat. 4.Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.

Chicken Parmesan Recipe

Ingredients:
Rastelli Direct™ Chicken Breast All Purpose Flour Salt, Pepper Bread Crumbs Parsley, Basil Eggs Cooking Oil (Canola or Olive) Tomato Sauce Fresh Mozzarella Cheese (Sliced)

Directions:
Prep Steps: Preheat Oven to 450° - 500° or set to High Broil Breading Station: Place Flour, Eggs (lightly whipped) and Bread Crumbs in three separate bowls. Season Flour with Salt and Pepper, to taste. Add Chopped Parsley and Chopped Basil to Bread Crumbs. Chicken Preparation: Slice Chicken in half (lengthwise) with a sharp knife. Dredge Chicken in Flour, shaking off excess. Dip Floured Chicken in Egg Mixture and place in Bread Crumbs. Sprinkle Bread Crumbs over Chicken until covered lightly. Repeat until all Chicken Breasts are breaded. Pour oil into a large sauté pan covering bottom with about ¼ inch of oil. Heat to approximately 375°. Lay chicken flat in pan making sure not to crowd the pieces. Cook 4-5 minutes per side, until golden brown and cooked through. Remove from pan and drain excess oil on paper towel. Place chicken on baking sheet. Spoon Tomato Sauce over fully cooked, breaded chicken. Cover with Fresh Mozzarella. Place in preheated oven until sauce is heated and cheese is melted.

Ingredients:
2 boneless skinless Chicken breasts, about 4-6oz each 1 cup chicken stock or broth 1 cup flour 1 cup Mushrooms, sliced 2 links sweet Italian sausage, oven roast, let cool, then slice 2 cloves garlic, ½ cup dry white wine ½ tsp oregano salt and pepper ½ cup Olive oil

Directions:
Preheat oil to 350 in a large sauté pan. Add flour to a mixing bowl and season with salt and pepper. Lightly dust the chicken in flour and cook until lightly browned on each side; about 3 to 4 minutes. Remove chicken from pan, set aside, cover and add mushrooms and garlic to oil. Sauté until lightly browned; then and add Italian sausage, white wine, broth, oregano, and season with salt and pepper. Mix well and add chicken breast. Cover and let simmer 10 minutes. Serve
