CONVENTIONAL OVENSTOVE TOPGRILL

Ingredients:  Shrimp

Preparation Instructions:  Keep frozen until ready to prepare.  Defrost under refrigeration for 24 hours or under slow running water until fully thawed.

 

Pan Sauté: Add 1-tablespoon oil or clarified butter to preheated sauté pan at medium high heat. Add desired amount of shrimp as to not overload pan and begin to cook for 5-8 minutes tossing repeatedly and quickly to insure shrimp cook evenly. Remove when shrimp turn red and opaque in color.

 

Grill: Lightly oil shrimp and season as desired. Place shrimp on well-greased grill rack 3-4 inches away from heat source. Cook 3-5 minutes turning once cooking in additional 3-5 minutes or until shrimp turn red and opaque in color.

Spiced Shrimp Skewers

Serves: 2-3
Prep Time: 20 minutes

Ingredients:
Ingredients: 12 Colossal Shrimp, 2 Tbsp Butter - Melted, 1 tsp Cayenne Pepper, 1 tsp Frank’s Red Hot Sauce, 1/2 Fresh Lemon - Juiced, 4 Wooden Skewers**

Directions:
Preparation: 1. Preheat Grill. Soak 4 wooden skewers in water for at least 15 minutes. 2. Toss Shrimp with Butter, Cayenne Pepper, Hot Sauce and Lemon. Place 3 shrimp on each skewer. 3. Grill just enough to get a slight grill-mark char (2-3 minutes per side). **For even more flavor replace wooden skewers with Fresh Sprigs of Rosemary

Marinated Grilled Shrimp

A very simple and easy marinade that makes your shrimp taste great. It is a big hit with company, and easy to prepare. Try it with a salad, baked potato, and garlic bread. You will not be disappointed

Serves: Yield 6 servings

Ingredients:
3 cloves garlic, minced 1/3 cup olive oil 1/4 cup tomato sauce 2 tablespoons red wine vinegar 2 tablespoons chopped fresh basil 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 2 pounds fresh shrimp, peeled and deveined skewers

Directions:
1.In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice. 2.Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade. 3.Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.

Cucumber Gazpacho with Shrimp and Melon

Serves: 4

Ingredients:
1 3/4 large cucumber, peeled, seeded, and coarsely chopped (about 3 1/4 cup), plus 1/4 large cucumber peeled, seeded, and cut into small dice for garnish. 2 scallions (white and green parts), coarsely chopped 1/2 cup (loosely packed) assorted fresh herbs, such as basil, chives, and mint, coarsely chopped (save a little for garnish at end) 1 (1/2 inch) piece of fresh ginger, coarsely chopped 1 small clove of garlic, coarsely chopped 3 tablespoons olive oil 1/4 cup plain yogurt 3/4 teaspoon kosher salt 1/4 teaspoon of freshly ground black pepper 1/4 teaspoon of hot sauce 1/4 pound of shrimp, peeled, cooked, and cut into medium dice 1/2 cup seedless watermelon or cantaloupe, cut into small dice

Directions:
In a blender or food processor, combine coarsely chopped cucumber, scallions, coarsely chopped herbs, ginger, garlic, olive oil, and yogurt and process until smooth, about 1 minute. Stir in 1/2 teaspoon salt, pepper, and hot sauce, then transfer to a large airtight container and refrigerate 1 hour or up to 4 hours. In a small bowl combine remaining shrimp, herbs, cucumber, and salt. Fold water melon or cantaloupe into soup. Divide soup evenly among 4 chilled bowls and top each with a dollop of shrimp mixture. Serve them immediately.
