CONVENTIONAL OVENSTOVE TOPGRILL

Ingredients:  Chilean sea bass

Preparation Instructions:  Keep frozen until ready to prepare.  Defrost under refrigeration for 24 hours or under cool slow running water until thawed.

 

Pan Sauté: Preheat medium size sauté pan to medium high heat. Add 1 tablespoon oil. Season sea bass as desired. Carefully add to pan and let sear for 3-5 minutes. Turn over and sear other side for 3-5 minutes or until golden brown on top and feels firm to the touch.

 

Grill: Preheat grill to medium high heat.  Lightly oil or use clarified butter to coat fish. Add to well greased grill rack about 3-4 inches away from heat source and begin to cook for about 3-5 minutes. Next turn over and cook an additional 5-6 minutes or until meat feels firm to the touch.

Grilled Sea Bass

This is a truly flavorful dish with a lovely plate presentation

Serves: Yield 6 servings

Ingredients:
1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon paprika lemon pepper to taste sea salt to taste 2 pounds sea bass 3 tablespoons butter 2 large cloves garlic, chopped 1 tablespoon chopped Italian flat leaf parsley 1 1/2 tablespoons extra virgin olive oil

Directions:
1.Preheat grill for high heat. 2.In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish. 3.In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside. 4.Lightly oil grill grate. Grill fish for 7 minutes, then turn and drizzle with butter. Continue cooking for 7 minutes, or until easily flaked with a fork. Drizzle with olive oil before serving.

Steamed Sea Bass with Ginger and Shiitakes

Serves: 4

Ingredients:
4 Pcs. 6oz. sea bass, skin removed Pinch of sea salt Pinch of cayenne pepper 1/4 cup fresh ginger, cut into thin strips 1 cup shiitakes, thinly sliced 2 tablespoons fresh cilantro, chopped 4 green onions, sliced diagonally 2 tablespoons regular or chili-infused sesame oil 1/2 cup soy sauce

Directions:
Bring water to a boil under a metal or bamboo steamer. Season sea bass with salt, black pepper and cayenne pepper; place on a piece of parchment paper inside steamer. Top with ginger and shiitakes, cover and steam for 15 minutes. Remove fish and place on a plate. Sprinkle cilantro and green onions on fish; drizzle with juice from parchment. In small sauté pan, heat oil over medium heat for 1-2 minutes or until smoking. Pour some oil over each fillet to wilt cilantro and green onions. Drizzle plates with soy sauce.

Sea Bass with Polenta and Roasted Red Bell Peppers

Serves: 6
Prep Time: 30 minutes

Ingredients:
3 red bell peppers, quartered 4 tablespoons olive oil 3 garlic cloves, minced 4 teaspoons chopped fresh thyme 3 cups whole milk 2 cups water 1 bay leaf 1 cup polenta (coarse cornmeal) 2 tablespoons whipping cream 6 6-ounce sea bass fillets 6 tablespoons tapenade

Directions:
Preheat oven to 350°F. Toss peppers, 2 tablespoons oil, garlic, and 3 teaspoons thyme in 13x9x2-inch metal baking pan. Roast until peppers are tender and brown in spots, turning occasionally, about 1 hour. Cut peppers into 1/2-inch strips and return to pan. Season to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature.) Bring milk, water, bay leaf, and 1 teaspoon thyme to simmer in heavy large saucepan. Cover and remove from heat. Let steep 15 minutes. Gradually whisk polenta into milk mixture. Bring to simmer over medium-low heat, whisking constantly. Continue cooking until thick and creamy, stirring often, about 20 minutes. Discard bay leaf. Mix in cream. Season with salt and pepper. Meanwhile, preheat broiler. Heat remaining 2 tablespoons oil in heavy large skillet over medium-high heat. Sprinkle fish with salt and pepper. Add to skillet; cook until opaque in center, about 4 minutes per side. Remove from heat. Spread 1 tablespoon tapenade over each fillet. Broil red peppers in pan until heated through, about 2 minutes. Spoon polenta onto 6 plates. Top with fish and red peppers
