Ingredients:  Tilapia

Preparation Instructions:  Keep frozen until ready to prepare.  Defrost under refrigeration for 24 hours or under cool slow running water until fully thawed.

 

Oven: Preheat oven to 350 degrees. Lightly oil or use clarified butter to coat fillets. Season tilapia as desired. Place tilapia fillets on nonstick baking sheet pan. Bake in oven for 10-15 minutes or until meat feels firm to the touch.

 

Pan Sauté: Preheat medium size sauté pan to medium high heat. Season tilapia fillets as desired. Add 1 tablespoon oil to pan. When hot add tilapia fillets and sauté for 3-4 minutes. Turn over and cook an additional 3-4 minutes or until meat feels firm to the touch.

Buttery Crusted Baked Tilapia

Serves: 4

Ingredients:
4 pieces of 5-7 tilapia filet 8-10 Ritz crackers, crushed 1 tablespoon of grated parmesan cheese 1/2 teaspoon seasoned salt 1/4 teaspoon chili powder 1/4 teaspoon adobe seasoning (optional) 1 teaspoon of dried parsley flakes 2 tablespoons unsalted butter, soften

Directions:
Arrange fish on a lined baking sheet. In a mixing bowl, combine crushed Ritz crackers with seasoned salt, parmesan cheese, chili powder, parsley flakes, and adobo seasoning and mix well. Cut butter into 4 equal pats. Place one pat of butter on each piece of fish and spread evenly coating each fillet. Sprinkle crumb topping evenly on each fish fillet. Bake in preheated oven at 425 degrees for 15-20 minutes, or desired doneness.

Seared Tilapia with Garlic Butter

Serves: 4
Prep Time: 15 minutes

Ingredients:
4 Tilapia fillets 6 tbsp butter 2 tbsp lemon juice ¼ cup white wine 2 tbsp garlic, minced 1 tsp dried thyme 1 tbsp kosher salt 1 tbsp ground black pepper 1 tbsp fresh parsley, minced 1 tbsp paprika

Directions:
Preheat oven to 325 degrees. To a small sauté pan over medium heat, melt butter and add garlic, thyme & paprika. Turn heat to low and sauté until lightly softened. To a shallow baking dish, add tilapia, lemon juice, wine, and season with salt and pepper. Bake tilapia for 12-15 minutes or until tilapia is fully cooked. Serve tilapia garnished with garlic butter mixture.

Grilled Tilapia with Mango Salsa

Prep Time: 15 minutes

Ingredients:
4 Tilapia fillets 2 tbsp olive oil 1 tbsp dried basil leaves 1 tbsp kosher salt 1 tbsp ground black pepper 1 mango, peeled & small diced ½ cup pineapple, peeled & small diced ¼ cup tomatoes, small diced ¼ cup red pepper, small diced 2 tbsp red onion, minced 3 tbsp cilantro, minced 1 tbsp ginger, minced 1 tbsp garlic, minced 2 tbsp lime juice 1 tbsp lemon juice 1 tsp table salt 1 tsp ground black pepper 1 tbsp fresh parsley, minced

Directions:
-Salsa In a medium bowl combine mango, pineapple, red onion, tomatoes, red pepper, cilantro, lime juice, lemon juice, ginger, garlic, salt & pepper. Mix well, cover, and refrigerate. -Tilapia Preheat grill and coat with nonstick cooking spray. Coat tilapia lightly with olive oil and season with kosher salt, dried basil & ground black pepper. Grill 4 to 5 minutes per side. Serve with salsa.

Dijon Mustard Panko Crusted Baked Tilapia

Serves: 4
Prep Time: 15 minutes

Ingredients:
4 Tilapia fillets ½ cup olive oil 4 tbsp honey 1 cup Dijon mustard ¼ cup mayonnaise 1 cup panko bread crumbs 1 tbsp paprika 1 tbsp fresh parsley, minced 2 tbsp kosher salt 2 tbsp ground black pepper 2 tbsp granulated garlic 2pcs lemon wedges

Directions:
Preheat oven to 325 degrees. In a medium stainless steel bowl combine honey, Dijon mustard & mayonnaise. Mix until well blended. In a separate medium bowl, combine the panko, paprika, fresh parsley, 1 tbsp kosher salt, 1 tbsp black pepper & 1 tbsp garlic. Mix well and set aside. In a medium nonstick sauté pan, heat oil. Season tilapia with remainder of salt, black pepper & garlic. Dip tilapia in honey mustard mayo mixture and coat on both sides. Dip coated tilapia in bread crumb mixture and coat on both sides. Add tilapia to pan and sauté until golden brown on both sides; about 3-4 minutes each. Place tilapia in oven and continue baking 8-10 minutes. Serve tilapia garnished with lemon wedges.
