Ingredients:  Pangasius

Preparation Instructions:  Keep frozen until ready to prepare.  Defrost under refrigeration for 24 hours or under cool slow running water until fully thawed.

 

Oven: Preheat oven to 350 degrees F. Lightly oil or use clarified butter to coat fillets. Season fillets as desired. Place Pangasius fillets on nonstick sheet pan. Bake in oven for 15-20 minute or until meat feels firm to the touch.

 

Pan Sauté: Preheat medium size sauté pan to medium high heat. Season Pangasius fillet as desired. Add 1 tablespoon oil to pan. When hot add Pangasius fillet and sauté for 3-4 minutes. Turn over and cook an additional 3-4 minutes or until meat feels firm to the touch.

This has a very mild flavor. Also, very economical to have any time. I just topped off with butter and some lemon and in the over for 20 minutes or so, and it was delicious!

Ingredients:
4 Pcs. 4-6oz. Pangasius 1/2 cup vegetable oil 1 cup all-purpose flour 3/4 teaspoon salt 1/2 teaspoon black pepper 3 large eggs 1/2 stick (1/4 cup) unsalted butter 1/2 cup dry white wine 1/2 cup low-sodium chicken broth 3 tablespoons fresh lemon juice plus 1 whole lemon, thinly sliced 2 tablespoons chopped fresh flat leaf parsley 1 tablespoon capers (optional) Pinch of sugar

Directions:
Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking. While oil is heating, stir together flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a shallow bowl. Dredge Pangasius in flour, shaking off excess. Lightly beat eggs in another shallow bowl. When oil is hot, dip floured Pangasius into beaten eggs to coat, letting excess drip off, then sauté in pan, turning over once, until golden brown and just cooked through, about 3-4 minutes total. Transfer to plate lined with paper towels and keep warm. Loosely cover with foil. Sauté remaining Pangasius in the same manner. Pour off and discard oil, then wipe skillet clean and heat butter over low heat until foam subsides. Add wine, broth, and lemon juice in pan, uncovered, stirring occasionally, until sauce is reduced to about 1/2 cup, about 6 minutes. Stir in parsley, capers, and remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Spoon sauce over Pangasius and top with lemon slices.

Beer Battered Pangasius

Serves: 4
Prep Time: 8 to 10 minutes

Ingredients:
4 Pangasius Fillets, about 4-6oz each 12 ounces dark beer 12 ounces flour 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 nutmeg 1/2 teaspoon baking powder

Directions:
Preheat fryer or oil to 350º. Remove fish from freezer and thaw per instructions. In a large mixing bowl, combine all ingredients except fish. Mix well. Dip pangasius fillets in batter and carefully add to oil. Deep fry till golden brown, about 3-5 minutes. Serve with tartar sauce and your favorite sides

Pangasius Fillet in Spicy Tomato Sauce

Serves: 4
Prep Time: 30 minutes

Ingredients:
4 portions Pangasius, thawed 1 28oz can whole peeled tomatoes ¼ cup vegetable oil 2 tbs capers 1 small onion, chopped 2 cloves garlic, minced 2 tbs crushed red pepper Salt and pepper

Directions:
Preheat oven to 350. In a large sauté pan, heat oil and add chopped onions and garlic. Cook until slightly browned and add whole tomatoes, capers, crushed red pepper flakes, salt, pepper, and let simmer 30 minutes. Season to taste. Bake fish 12-15 minutes. Serve with sauce.

Pangasius with Green Olives & Tomato

Serves: 4
Prep Time: 20 minutes

Ingredients:
4 Pangasius Fillets 1 cup pimiento-stuffed green olives, drained, rinsed, and chopped 6 roma tomatoes, seeded and chopped 2 tablespoons extra-virgin olive oil 1 teaspoon finely grated fresh lemon zest 3 tablespoons chopped fresh flat-leaf parsley

Directions:
Stir together olives, tomatoes, oil, zest, and 2 tablespoons parsley in a bowl. Arrange fish fillets, in an oiled 12-inch nonstick skillet, tucking thinner ends of each fillet under. Season fish with salt and pepper, then mound olive-tomato mixture on top. Put a round of parchment or wax paper on top of olive mixture, then tightly cover skillet. Cook fish over moderate heat until just cooked through, 8 to 10 minutes. Serve sprinkled with remaining tablespoon parsley.

Pangasius Roll-ups

Ingredients:
4- Pangasius portions, about 4-6 each 1-8oz can clams or whole oysters, chopped (Drain and reserve liquid in a container) 2 cups herb stuffing mix 2 cups corn bread stuffing mix 1/2 cup chopped celery 1/2 cup chopped onion 3/4 cup hot chicken broth 3 tbs unsalted butter Juice of 2 lemons ½ cup water Salt and pepper to taste

Directions:
Preheat oven to 375°F. In a large heavy sauce pan, combine reserved seafood liquid and chicken broth. Heat to a light simmer, (do not boil). In a large bowl, combine oysters or clams, stuffing mix, celery, and onion. Gradually add reserved liquid to bread crumb mixture, stirring well to moisten all pieces. In a shallow non-stick baking dish, place basa filets skin side up. Top each fillet with a generous portion of the stuffing mixture. Roll fish fillets around stuffing mixture and arrange roll-ups in pan at least 1 inch apart. Add butter, lemon juice, and water to pan. Season each piece with salt and pepper. Cover with foil and bake 20-25 minutes.
