Ingredients:  Catfish

Preparation Instructions:  Keep frozen until ready to prepare.  Defrost under refrigeration for 24 hours or under cool slow running water until fully thawed.

 

Oven: Preheat oven to 350 degrees F. Lightly oil or use clarified butter to coat fillets. Season fillets as desired. Place catfish fillet on nonstick sheet pan. Bake in oven for 15-20 minutes or until meat feels firm to the touch.

 

Pan Sauté: Preheat medium size sauté pan to medium high heat. Season catfish fillet as desired. Add 1 tablespoon oil to pan. When hot add catfish fillet and sauté for 3-5 minutes. Turn over and cook an additional 3-5 minutes or until meat is firm to the touch.

Grilled Catfish with Fresh Salsa

Serves: 4

Ingredients:
4 Pcs. of 6 oz. catfish fillets 1/2 teaspoon garlic salt 1/2 teaspoon black pepper 1 teaspoon cayenne pepper Pinch of dried parsley flakes Salsa ingredients: 3 medium tomatoes, chopped 1/4 cup red onion, chopped 2 medium jalapeno peppers, chopped 3 tablespoons white wine vinegar Pinch of fresh cilantro, chopped 1/2 lime, juiced 1-2 tablespoon oil 1 teaspoon salt

Directions:
Prepare grill or preheat broiler. Sprinkle catfish fillets with garlic salt, black pepper, and cayenne pepper. Place fillets on oiled grill rack or broiler pan rack. Grill or broil about 4 inches from heat source for about 5 minutes on each side, or until fish flakes easily when tested with fork. Place a fillet on each serving plate and spoon fresh salsa over top and serve. For salsa preparation: Combine all ingredients in medium size bowl and chill in refrigerator at least 1 hour before serving.

Baked Catfish with a Caribbean Barbeque Sauce

Serves: 4
Prep Time: 20 minutes

Ingredients:
4 Catfish fillets 3 tbsp olive oil 2 tbsp butter 2 tbsp Worcestershire sauce ½ cup molasses ½ cup whole grain mustard 3 tbsp Dijon mustard ½ cup red wine vinegar 3 tbsp white onion (minced) 2 tbsp garlic (minced) 2 tbsp Caribbean jerk seasoning ¾ cup ketchup ¼ cup lime juice 1 tbsp kosher salt 1 tbsp ground black pepper 1 tbsp parsley (minced)

Directions:
Season catfish with kosher salt, ground black pepper, & Caribbean jerk seasoning. In a medium sauté pan heat butter and add garlic & onions. When garlic & onion turn golden brown add Worcestershire sauce, molasses, whole grain mustard, Dijon mustard, lime juice, red wine vinegar & ketchup. Mix together until well blended and turn up heat until boiling point. Preheat oven to 325 degrees. In a medium sauté pan heat olive oil and place seasoned catfish in pan. Sear for about 4 minutes per side. Place catfish fillet in oven safe bake dish then add 1 cup of the barbeque sauce. Bake for 10 minutes. Garnish with parsley and serve.

Southern Fried Catfish

Ingredients:
4 Catfish fillets 2 cups canola oil 1 cup all purpose flour 6 whole eggs 1 cup cornmeal 3 tbsp paprika 3 tbsp Cajun seasoning 3 tbsp kosher salt 3 tbsp ground black pepper 3 tbsp granulated garlic ¼ cup tartar sauce 3pcs lemon wedges

Directions:
Gather 3 small bowls. In the first bowl add flour, 1 tbsp kosher salt, 1 tbsp ground black pepper, 1 tbsp granulated garlic, 1 tbsp paprika & 1 tbsp Cajun seasoning. Mix until well blended. In the second bowl add eggs and whisk until well blended. In the third bowl add cornmeal, 1 tbsp kosher salt, 1 tbsp ground black pepper, 1 tbsp granulated garlic, 1 tbsp paprika & 1 tbsp Cajun seasoning. Mix until well blended. Season catfish fillet with remainder of kosher salt, ground black pepper, granulated garlic, paprika & Cajun seasoning. In a medium sized sauté pan heat olive oil. Preheat oven to 325. Next, dredge catfish fillets in seasoned flour, then dip in egg batter, and finally coat with the cornmeal mixture. Brown catfish on each side until golden brown then bake in oven for 10 minutes. Serve with tartar sauce and garnish with lemon wedges.

Fried Catfish Sandwiches with Cajun Remoulade

Ingredients:
4 Catfish fillets 2 cups canola oil 1 cup all purpose flour 6 whole eggs 1 cup cornmeal 3 tbsp paprika 3 tbsp Cajun seasoning 3 tbsp kosher salt 3 tbsp ground black pepper 3 tbsp granulated garlic ¼ cup iceberg lettuce (shredded) 1 plum tomato (sliced thin) 1 red onion (sliced thin) 4 Kaiser rolls For Cajun remoulade: 2 cups mayonnaise 2 tbsp capers (minced) 1 tbsp garlic (minced) 1 tbsp Cajun seasoning 3 tbsp lemon juice 1 scallion (sliced thin)

Directions:
Remoulade: In a small stainless steel bowl combine mayonnaise, capers, garlic, scallions, Cajun seasoning & lemon juice. Mix until well blended. Can be made ahead and refrigerated. Catfish: Gather 3 small bowls. In the first bowl add flour, 1 tbsp kosher salt, 1 tbsp ground black pepper, 1 tbsp granulated garlic, 1 tbsp paprika & 1 tbsp Cajun seasoning. Mix until well blended. In the second bowl add eggs and whisk until well blended. In the third bowl add cornmeal, 1 tbsp kosher salt, 1 tbsp ground black pepper, 1 tbsp granulated garlic, 1 tbsp paprika & 1 tbsp Cajun seasoning. Mix until well blended. Catfish Tacos with Tomato and Avocado Salsa

Prep Time: 30 minutes

Ingredients:
1 cup chopped plum tomatoes 1/2 cup chopped peeled avocado 5 tablespoons fresh lime juice 3 tablespoons chopped green onion 3 tablespoons chopped fresh cilantro 3 teaspoons minced jalapeño chilies with seeds 1 pound catfish fillets 2 garlic cloves, minced 4 5- to 6-inch corn or flour tortillas 2 cups thinly sliced curly leaf lettuce 1/4 cup crumbled feta cheese

Directions:
Preheat oven to 350°F. Mix tomatoes, avocado, 2 tablespoons lime juice, onion, cilantro, and 2 teaspoons jalapeños in small bowl. Season with salt and pepper. Place fish in single layer on small rimmed baking sheet. Mix garlic, 3 tablespoons lime juice, and 1 teaspoon jalapeños in another small bowl. Drizzle half of lime juice mixture over fish; reserve remainder. Sprinkle fish with salt and pepper; let stand 15 minutes. Meanwhile, wrap tortillas in foil, enclosing completely. Place in oven until heated through, about 15 minutes. Preheat broiler. Broil fish just until opaque in center, about 6 minutes. Cut fish into 1-inch pieces. Top each tortilla with 1/2 cup lettuce, then fish pieces. Drizzle with reserved lime juice mixture. Spoon salsa over; sprinkle with cheese.

Catfish in Spicy Tomato Sauce

Ingredients:
6 (5-ounce) catfish fillets 1 (28-ounce) can whole tomatoes in juice 1 tablespoon olive oil 2 garlic cloves, finely chopped Rounded 1/4 teaspoon cayenne 3/8 teaspoon ground cinnamon 1/4 teaspoon ground cumin 1/8 teaspoon ground allspice 1/8 teaspoon ground ginger 1 1/4 teaspoons salt 1 1/2 teaspoons sugar 3 tablespoons chopped fresh flat-leaf parsley

Directions:
Put oven rack in middle position and preheat oven to 400°F. Purée tomatoes with their juice in a blender. Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook garlic, spices, and 3/4 teaspoon salt, stirring, until garlic is golden, about 1 minute. Add tomato purée and sugar and briskly simmer, uncovered, stirring occasionally, until slightly thickened, 6 to 8 minutes. Pour sauce into a 13- by 9-inch baking dish. Pat fish dry and sprinkle with remaining 1/2 teaspoon salt. Arrange fillets in 1 layer on sauce, tucking each tail end under if necessary to fit, and bake until fish is just cooked through, 10 to 12 minutes. Serve sprinkled with parsley.
