Ingredients:  Grouper

Preparation Instructions:  Keep frozen until ready to prepare.  Defrost under refrigeration for 24 hours or under cool slow running water until fully thawed.

 

Oven: Preheat oven to 350 degrees F. Lightly oil or use clarified butter to coat fillets and season as desired. Place on nonstick sheet pan. Bake in oven for 15-20 minutes or until meat feels firm to the touch.             

 

Pan Sauté: Preheat medium size sauté pan to medium high heat. Season grouper fillet as desired. Add 1 tablespoon oil to pan. When hot add grouper and sauté for 3-5 minutes. Turn over and cook an additional 3-5 minutes or when fish feels firm to the touch.

Crabmeat Crusted Grouper Fillets-

Serves: 4

Ingredients:
2 tablespoons parmesan cheese flavored bread crumbs 2 tablespoons chopped red bell pepper 2 tablespoons chopped yellow bell pepper 2 green onions, chopped 1/4 jalapeno pepper, seeded and minced 4 tablespoons butter, melted 1 (6ounce) can crabmeat, drained and flaked 2 tablespoons shredded mozzarella cheese 4 (6 ounce) grouper fillets

Directions:
Preheat oven to 375 degrees. In a medium bowl, stir together the bread crumbs, red pepper, yellow pepper, green onions, jalapeno, butter, crabmeat, and mozzarella cheese. Arrange grouper fillets in a single layer in a 9x13 inch baking dish. Spread the crumb mixture over top each fillet evenly. Bake for 30 minutes in preheated oven, or until fish is easily flaked with a fork.

Molasses & Rum Glazed Grouper

Serves: 4
Prep Time: 20 minutes

Ingredients:
4 portions grouper fillets 1 cup dark rum ½ stick 2 tbs unsalted butter ½ cup dark molasses

Directions:
In a heavy sauce pan melt the 2 tbs butter. Carefully add rum and cook to burn off alcohol; about 30 seconds. Add molasses, mix well, bring to a simmer, and remove from heat. Set aside to cool at least 20 minutes. In a nonstick pan, melt remaining butter. Brush a generous portion of the glaze on both side of the grouper and add to pan. Brown on both sides, painting on additional glaze until done. Serve.

Grouper Mala Femina “Bad Woman”

Serves: 4
Prep Time: 15 minutes

Ingredients:
4 medium Grouper Fillets, about 6-8oz each 1/2 cup green olives, pitted 1/2 cup black olives, pitted 1 cup roasted red peppers, whole 2 cloves garlic ¼ cup capers 1 tin anchovies, with oil ½ cup olive oil ¼ cup white wine 1 cup flour ½ cup dry white wine ¼ cup brandy 1 tbs unsalted butter Salt and pepper

Directions:
In a food processor, add olives, peppers, anchovies, garlic, and capers. Pulse to a rough mixture and set aside. Preheat oil in a large heavy non stick pan. To a shallow dish add flour and season with salt and pepper. Dust grouper fillets in flour and brown in skillet 3-4 minutes per side. Drain off excess oil, reduce heat to medium and add Mala Femina mixture and white wine and brandy. Reduce by half and add butter. Season to taste with salt and pepper. Serve.

Scampi Style Grouper

Prep Time: 15 minutes

Ingredients:
4 medium Grouper Fillets, about 6-8oz each 1/2 cup olive oil 4 large garlic cloves, left unpeeled and forced through a garlic press 1/2 cup dry white wine 1 teaspoon salt 1/2 teaspoon black pepper 5 tablespoons unsalted butter, cut into chunks 1/2 cup chopped fresh flat-leaf parsley 2 lemons, sliced and squeezed

Directions:
Arrange a rack on the second tier in oven. Preheat oven to broiler. In a shallow oven-proof baking dish, arrange grouper fillets side by side but not overlapping. In a mixing bowl, add garlic, oil, parsley, lemon slices and lemon juice, wine, salt and pepper to taste. Mix well and pour over fillets. Add butter to dish. Place dish on oven rack and broil 4-5 minutes until lightly browned. Remove dish from broiler, carefully turn over fillets and continue cooking an additional 5-7 minutes. Remove from oven. Let stand 2-3 minutes. Serve.

Preheat oil in a large heavy non stick pan. To a shallow dish add flour and season with salt and pepper. Dust grouper fillets in flour and brown in skillet 3-4 minutes per side. Reduce heat to medium/ Add tomatoes, artichokes, garlic, and olives. Cook 2-3 minutes and add wine. Cook 2 minutes and add butter. Serve.

Hot Fried Grouper Sandwich with Tarragon-Lemon Mayo

Serves: 4
Prep Time: 20 minutes

Ingredients:
4 portions grouper fillets 1 cup light beer 1 cup flour 1 cup mayo Juice of 1 lemon 3tbs tarragon, chopped 8 strips bacon, cooked crisp Lettuce Tomato Red onion, sliced Salt and pepper 4 hoagie rolls

Directions:
Preheat fryer. Make a quick batter using beer, flour, salt, pepper. Dip grouper in batter and fry until golden brown. Combine mayo, 1 lemon juice, & tarragon leaves in a small bowl and mix well. Toast a hoagie roll and season both sides with mayo. Place fish on bun and top with lettuce, tomato, and crispy bacon.
