Ingredients:  Calamari

Preparation Instructions:  Keep frozen until ready to prepare.  Defrost under refrigeration for 24 hours or under cool slow running water until fully thawed.

 

Deep Fry: Preheat fryer to 350 degrees F.  While heating, make seasoned flour mixture with flour, salt, and fresh ground black pepper or as desired. Coat calamari rings with flour mixture.  Carefully add to deep fryer and let cook for 2-3 minutes or until golden brown. Note: Calamari cooks quickly when fried.

 

Pan Sauté: Preheat medium size sauté pan to medium high heat. Season calamari as desired. Add 1 tablespoon oil to pan. When hot add calamari and cook for 2-4 minutes tossing frequently as calamari cooks quickly. Remove from heat and serve.

Greek Calamari Salad

Serves: 4 to 6

Ingredients:
1 1/2 pounds calamari rings 2 tablespoons fresh lemon juice 1-2 tablespoon red wine vinegar 1/3 cup extra virgin olive oil 1 large garlic clove, minced 1/2 teaspoon salt 1/4 teaspoon of black pepper 1 small red onion, halved lengthwise, then thinly sliced crosswise (about 1 cup) 1/3 cup pitted kalamata olives, halved lengthwise 1/4 cup feta cheese, crumbled 2 cups cherry tomatoes, cut in half, lengthwise 2 celery ribs, cut into 1/4 inch thick slices 1 cup loosely packed fresh flat-leaf parsley leaves

Directions:
Cook calamari rings in a 5-6 quart pot of boiling salted water, uncovered, until opaque, 40-60 seconds. Drain and shock in ice water to stop cooking process. When cool drain well. Next whisk together lemon juice, vinegar, oil, garlic, salt, and pepper in a small bowl, then add in sliced onion and let stand for 5 minutes. Meanwhile, combine squid rings, olives, tomatoes, celery, feta cheese, and parsley leaves in a large bowl. Toss with dressing and season with salt and pepper. Let stand at least for 15-20 minutes to allow flavors to develop. Serve well chilled.

Ragin’ Cajun Calamari with Creole Dipping Sauce

Serves: 2
Prep Time: 25 minutes

Ingredients:
For the Calamari 1lb Calamari rings, thawed and drained 2 cups flour ¼ cup Cajun seasoning Oil for frying Sauce 2 cups mayo 2 tbs ketchup 1tsp Worcestershire sauce 1tsp cayenne pepper 1 tbs horseradish 1tsp celery salt 1tsp paprika 1 tbs spicy mustard Juice of ½ of lemon

Directions:
Preheat oil to 350. In a large mixing bowl, add flow and Cajun seasoning. Mix well. Add calamari rings. Toss well in flour mixture to coat. Remove from flour and shake off excess. Carefully add to oil and fry until golden brown, about 4-5 minutes. In a small mixing bowl, combine remaining ingredients and mix well. Serve with calamari.

Buffalo Style Calamari

Serves: 2
Prep Time: 15 minutes

Ingredients:
For the Calamari 1lb Calamari rings, thawed and drained 2 cups all purpose flower Salt and pepper For the sauce 1 liter Louisiana Hot Sauce ½ stick unsalted butter 1 tsp garlic powder Salt and pepper to taste Oil for frying Celery sticks Carrot sticks Ranch dressing (optional)

Directions:
Preheat oil to 350º. In a heavy sauce pan, heat hot sauce and butter to a slight boil. Add garlic; salt and pepper to taste. In a large mixing bow, add flour, salt, and pepper. Add calamari rings and coat well with flour. Shake off excess flour and fry until golden brown; about 5-7 minutes. Place calamari in a large bowl or container. Spoon generous amount of sauce over calamari and toss well to coat. Serve along side celery and carrot sticks.

Calamari Salad

Ingredients:
For the Calamari 1lb Calamari rings, thawed and drained 2 cups water 2 cups dry white wine 1 lemon, sliced Salt and pepper 2 sprigs fresh dill For the Salad 1 Bag spring mix 1 small red onion, sliced thing 1 roasted red pepper, chopped Parmesan cheese, roughly chopped ½ cup extra virgin olive oil 3 tbs white balsamic vinegar ¼ tsp Dijon mustard ½ tsp sugar Salt and pepper to taste

Directions:
In a large sauce pot, add water, wine, lemon, dill, and a generous dash each of salt and pepper. Bring to a mild simmer over medium high heat. Add calamari and stir will to cook evenly, about 2-3 minutes. From liquid and refrigerate immediate. In a large salad bowl or platter, arrange spring mix, Top withy onion, peppers, and parmesan cheese. Combine in a small bottle with a lid olive oil, vinegar, mustard, and sugar. Shake well and pour over salad.
